hi
I tried to make Choux paste with an old recipe of mine - it worked the first few times and then failed dismally the next few! Any advice or alternate ways to make choux paste? Been dying to make proper Choc Eclairs! |

I make this all the time and have never had a problem 1 cup water 4 oz (1 cube) unsalted butter 1 tsp salt Bring to a boil- add all at once 1 cup A.P. flour Stir and cook for about 10-15 sec Should be a semi dry blob. Add 4 eggs, one at a time with a wooden spoon- make sure it is well incorporated before adding the next egg. Bake as directed |
