I have a question
 
Could someone please explain to me how you use the 2 piece cake molds with
clips. For example there is a lamb you make at Easter. I don't understand
how they work

I've never used one of these, but my Mother used to make the lamb cake
every Easter. IIRC she would fill just one half of the mold, then put
the other half on top and bake it that way. I don't know if the two
halves were clipped together or not, and I don't remember which half was
filled. I do recall that the cakes were good. :-)

Like just about everything else, there should be some info on this
searchable via Google.

These molds usually have one with a small hole in it and the other is
flat to lay on the oven shelf. Fill the flat side with batter and clip
the other half to it. Place in the preheated oven and bake. You can
test for doneness by inserting a toothpick through the hole to see if
the cake is done. Be sure you grease and flour both halves of the mold
so the cake won't stick. I usually let the cake cool on a rack for 10
minutes and then remove 1/2 the mold, let cool some more, put that half
back on the cake and turn it over and remove the other 1/2 so that side
can cool.
