I don't understand > how they work > > Thank you, > dizzi These molds usually have one with a small hole in it and the other is flat to lay on the oven shelf. Fill the flat side with batter and clip the other half to it. Place in the preheated oven and bake. You can test for doneness by inserting a toothpick through the hole to see if the cake is done. Be sure you grease and flour both halves of the mold so the cake won't stick. I usually let the cake cool on a rack for 10 minutes and then remove 1/2 the mold, let cool some more, put that half back on the cake and turn it over and remove the other 1/2 so that side can cool.
