I am baking oatmeal cookies from a recipe. The cookies are always
puffy when then come out of the oven but then lose their puffiness and flatten out while air cooling on the cookie sheet. What causes the cookies to go flat and how can I remedy the problem? I want them to stay puffy and robust. Altitude is not the problem. I am only 300 - 500 feel above sea level. The recipe does not call for baking powder. Thanks Tim |

Tim,
What kind of shortening are you using? Crisco will help them stay full and soft but if you use butter they will flatten and get crisp. D.L. |
