4 tablespoons unsalted butter
1/3 cup granulated sugar
3 large eggs
1/3 cup all-purpose flour
1/4 teaspoon salt
8 ounces dark chocolate, melted
confectioners' sugar for dusting
whipped cream, if desired

Preheat oven to 400F degrees. Generously spray with nonstick spray 6
cups in standard muffin tin. Dust with granulated sugar and tap out
excess. Set aside.

With electric mixer, beat butter and granulated sugar until fluffy.
Add eggs one at a time, beating well after each addition. With mixer
on low speed, beat in flour and salt just until combined. Beat in
chocolate - do not overmix. Divide batter evenly among prepared
muffin tins.

Place muffin tin on baking sheet. Bake just until tops of cakes no
longer jiggle when pan is lightly shaken, 12 to 14 minutes. Remove
fromoven and let stand for 10 minutes.

To serve, turn out cakes and place on serving plates. Dust with
confectioners' sugar and serve with whipped cream, if desired.
