Garlic Bean Soup
Recipe By : Serving Size : 4 Preparation Time: 0:00 Categories : Alive & Cooking 2 Tbsp virgin olive oil 1 onion,coarsely chopped 8 large garlic cloves,peeled, up to 10 600 ml vegetable or chicken stock 2 large cans haricot,cannelini or black-eyed beans salt and pepper natural yoghurt and chopped fresh herbs to garnish wholemeal croutons,(optional) Heat the oil in a saucepan and cook the onion and garlic over a low heat until softened. Add the stock and half the beans, bring to the boil and simmer for 20-30 minutes. Puree in a liquidiser until smooth. Add the remaining beans to the soup and season to taste. Reheat the serve hot, with a swirl of yoghurt and a sprinkling of herbs. |
