Ava's Oklahoma Hillbilly Chocolate Gravy
1/2 to 3/4 cup flour 1/2 to 2/3 cup sugar 1 to 1 1/2 Tbsp cocoa Dash to 1/2 tsp salt 1/2 to 1 cup milk 1 to 2 Tbsp vanilla 1/4 cup (1/2 stick) of butter (Optional: 1/3 cup Butter flavored or plain flavored Crisco) Mix together butter or Crisco, salt, and flour over med. heat. While keeping mixture blended, mix remaining ingrediants together in seperate bowl. (same as making regular gravy). Use a whisk to mix cocoa well into milk. If flour mixture looks as though it's cooking too fast, turn heat down a little bit. Add Milk mixture to Flour mixture, stirring while pouring. Keep well blended and mixed. For thicker gravy. Allow for longer cooking time and let gravy come to boil without stirring but watch closely so it doesn't scourch or burn. Thickness depends upon preverence. Butter biscuts then add gravy or visa versa. We've always found it tasted much better if we poured our hot gravy and slapped butter on top .. Hope you enjoy this receipe! Handy Hint: If your gravy gets done before the rest of your meal then take a pieace of WAX PAPER and lay it over the top of your gravy until serving time.
