"Thai-It-Up" Soup

1 pkg Campbell's Select Gold Label Golden
Butternut Squash Soup (10oz)
1 Tablespoon peanut oil
1/4 cup minced onion
3 cloves garlic -- finely minced
3 spring onions -- finely sliced
1 Tbsp ginger root -- peeled and minced
finely
2 Tbsp fish sauce
2 Tbsp lime juice
2 Thai kaffir lime leaves -- bruised
1 Thai hot bird chiles -- minced (1 to 2)
1/4 cup Thai holy basil leaves (the hairy kind) -- fine
chiffonade
1/4 cup mint leaves -- fine chiffonade
1/4 cup cilantro -- fine chiffonade
Crushed peanuts for garnish
Optional garnish: fried garlic chips,
fried shallot flakes

We tried this new type of soup straight from the package, but my husband
said "I
don't know. It needs something. Maybe you could "Thai" it up somehow ?" -
This
is what I came up with. Very good!

In a saucepan, melt the onions, ginger, garlic and spring onion until the
garlic just starts to brown. Add the soup, fish sauce, lime juice, lime
leaves, chiles, basil, mint and cilantro. Warm the soup through to good
heat, but over low heat as it is very starchy and could scorch. Allow it
to sit for a while for the flavours to develop fully. Garnish as suggested
and serve.
