Mary Lou's Hearty Cabbage Soup

Helen's Cabbage Soup

Serving Size: 8

1/2 md Cabbage
5 Onions, sliced
1/2 lb Margarine
6 Potatoes, diced
28 oz Tomatoes
Water *

NOTE: I try and cut down on the amount of marg * 3 times the normal amount
used to cook potatoes. I just cover them and add water if necessary.

In a large pot, fry onion and cabbage in margarine slowly till tender and
brown, about 25 minutes. Boil potatoes till cooked. Add tomatoes and fried
onion and cabbage. Season to taste. Simmer 30 minutes. Sausage can be browned
with the vegetables and added as desired. From: Helen Peagram

Mary Lou's Hearty Cabbage Soup

Serving Size: 4

1/2 Head red cabbage
1/2 Head green cabbage
1/2 large Spanish onion, peeled
4 large or 5 carrots, peeled
4 large or 5 potatoes, peeled
1 cn 14oz kidney beans, rinsed
2 To 3 28 oz can plum Tomatoes
1 can Tomato paste
1 tsp Salt
Pepper
Basil
Parsley
1/4 lb Bacon, cooked
2-3 Polish sausage, pre-browned
5 slices Ham, diced

Slice cabbage, onions, carrots. Dice potatoes. Sautee onions in leftover
bacon drippings. Put all ingredients in pot. Add water to cover all (if
needed). Cook for 3-4 hours stirring occasionally. I use LOTS of pepper
since this is supposed to be a PEPPERY winter warming, sinus clearing
soup. Add sausage whole or sliced to soup and cook for another 20 minutes
before serving. Serve with buttered bread and sour cream dolluped on top
(remove sour cream for low cal version.) From: Mary Lou Kakanowski
