Default Is it "bqqin" on a steel plate "cheatin"?

Hey All,

It's the "Baking Bread in the ECB" guy again. This weekend I tried
out the dual plate setup in my ECB.

Basically I laid a steel plate smaller than the diameter of the ECB on
the top wire grill. Then I laid another steel plate, larger than the
ECB body, that rests on the edge of the ECB body. This means there is
a ~1/4" gap between the 2 steel plates.

Now don't laugh but the main reason I am doing this is because I have
a lot of pruned mesquite clippings/twigs/branches from my yard and so
I figure I might as well burn em. Of course this means I get teeny
tiny short lived coals. I guess I could "flame on" and burn these down
outside of the ECB and then shovel em into the ECB. But I can't be
bothered and I'd rather just stuff in some twigs and crap every ~30
minutes.

This is where the double plates save my ass. When the twigs burst
into flame, the bottom plate moderated the heat flux/spike to the top
plate so my meat or bread doesn't burn. It worked out pretty darn
good this weekend. I have some larger diameter mesquite in the
pipeline for proper coals but I'll aways have more twigs than trunks.

So is this cheating? Compared to using proper sized coals and placing
the meat on wire grills instead of steel plates?

Now some other stuff I learned this weekend.

Beef ribs - a lot of bone, not much meat - worse than crab - pork ribs
are better. Still they came out pretty darn good on the steel plate.
The curvature of the ribs meant the smoke could still contact on both
sides - top and bottom.

Turkey wings - them sonfabitches are big. One of these days I want to
make monster buffalo wings.

Salmon is easy on a steel plate - zero fall through compared to a
grill and no cleaning up a mesh basket turner.

Later this week, I'll lay another steel plate down in my backyard (for
easy cleanup) and use that to "flame on" some coals and try out some
of my dutch ovens. Yeah, I'll probably burn some stuff at first.

It's your cooker and if your happy with the results is all that matters.
Doesn't sound any different than having a pan between the coals and the
meat. Your 'mass' of the steel plates sounds ok and makes sense to me
when you talk about temp fluctuations with flames then die down of
flames. Whatever works for you. If you really , really like the steel
plate and if it was me I'd somehow mount a grid above the plate so you
get even smoke/heat all around the meat but thats me, can't speak for
anyone else.

I disagree with you.

I would be the first to stomp on bad thoughts/feelings from you or
anyone else that are not being nice. Especially to a nice newbie.

But I will also do that when you have decided to just not be nice. Sue
me. That's how I roll.

'Attempting' is sometimes the right word, dear. And you hafta admit
that emoticons make it quite a bit easier to tell when someone's

Um, there's an Australian beer - green glass Buddha bottle - that's
named Lucky beer. I had one, mainly to get the bottle - yeah I am
funny that way - the beer was decent* and I actually kinda sorta want
to get another so I can have a mated pair. :-)

*(it wasn't Pilsner Urquell or Stone Brewery caliber)
