I think there's still a Caveman Kitchen in Kent, which is decent.
In south Seattle, there is Jones. Their pork ribs are tasty, just ask for the sauce on the side cuz they tend to overdo it...needlessly. I don't know about Tacoma but I would bet there's at least one good pit in that town.
