I'm seeking opinions on the electric knife sharpeners made by Chef's Choice. Naturally, their ads claim that they do a wonderful job, but I'd sure appreciate some unbiased recommendations as to how well they work ! Thanks for any help! Knox G. |

I have used the Chef Choice for years and they do a great job.
I use the steel between each daily use . They put the edge back on and hone the edge also. All my adult children have one also ... everybody loves the dang things that have one. Get one try it and if you hate it take it back !! Good Luck. Mine has a whirling grind stone and two sets of oscillating diamond hones. I can't say anything bad about it, but I haven't used it in years. It can't sharpen right up to the tang and for some illogical reason that bothers me. I use a (diamond) steel on a daily basis. My knives are all sharp enough to slice tomato skin without tearing or bruising. Brick |

A friend of mine who uses knives seriously (to cook and to butcher deer)
swears by his. I could never get a satisfactory result. I"ve had one for a while and I just can't get the results some say they do.
I generally use it than follow the procedure with ceramic stick dual angle unit. It is highly unlikely that you can maintain the same bevel angels when you then move to ceramic sticks unless you actually know the angels that the Chefs choice uses. You are probably just undoing whatever the Chefs's choice had done when you use the ceramic sticks. Yeah I've been thinking about a new one as the 110 has been a real
disappointment to me. NO disrespect to joe doe but if the damn thing PUT an edge on the knife in the first place I wouldn't have to use the ceramics. If you think the Chefs choice is useless then using it first and allowing it to set two bevel angels and then using ceramics which will likely be at different angels is the part I have trouble understanding. If I had concluded the Chefs choice was useless I would use only the ceramics. If your routine works for you more power to you. Roland |

It works quite well however I'd prefer to simply use the Chefs Choice I just
don't know why it won't put that real nice "edge" on my cutlery. It does sharpen it it just doen't seem to put that last fine edge on.
