I *insist* that you stop by John Muellers in Austin for brisket. I'm sure Frank (and anybody else in Austin who's eaten there) will back me up on this. The Muellers are one of the families in the "Central Texas BBQ Dynasties" - they've been BBQing for quite a while, though John's joint is relatively new (2001). The vertical pits are something to take note of as well. The crust on the brisket is coarsely ground: pepper-garlic-salt, somewhat unique in its rustic style. Everybody gets a free sample as you step up to order. It very well-executed. There will be other places surrounding Austin on your list, too. Drop me a line ) when you plan on stopping by and I can probably meet you there, or nearby, for a 12pm lunch (because they're not open for dinner, and they might be out by 1:00pm). -sw |
