Let me recommend you also post on www.chowhound.com on the appropriate
regional boards for recommendations. I've been given some great
recommendations during my travels.

What a great and pleasant surprise. And your mention of Hound reminds me
how long it's been since we've had some really good news around here.

It's good to hear that you're doing so well. Also glad to hear that the Q
joint is on track. Can't commit to the opening, but if I'm anywhere in the
neighborhood... (I was saying to an old friend that it's been too long
since I've visited him in Missoula. Hell, once I've driven the 1200 miles
to get there, I only need to go about 20 more and it's downhill to
Wenatchee. <g> )

It is so good to see you back, Dave. It just hasn't ever really seemed the
same here without your input. Glad to hear things are going well and I can't

None that I'd recommend driving out of the way for in Orlando, but if you happen
to be passing through, I'll treat at "Bubbalou's Bodacious BBQ"
If you go anywhere near Titusville, there's a great seafood restaurant, but
since you are from the Pacific Northwest, you'd most likely be underwhelmed.

You will no doubt be making central Texas one of your stops. I
*insist* that you stop by John Muellers in Austin for brisket.


I'm sure Frank (and anybody else in Austin who's eaten there) will
back me up on this. The Muellers are one of the families in the
"Central Texas BBQ Dynasties" - they've been BBQing for quite a
while, though John's joint is relatively new (2001).

The vertical pits are something to take note of as well. The
crust on the brisket is coarsely ground: pepper-garlic-salt,
somewhat unique in its rustic style. Everybody gets a free sample
as you step up to order. It very well-executed.

There will be other places surrounding Austin on your list, too.
Drop me a line ) when you plan on
stopping by and I can probably meet you there, or nearby, for a
12pm lunch (because they're not open for dinner, and they might be
out by 1:00pm).

Blues and 'Q.... hmmmm.... somewhere I've heard that the two kinda
compliment each other <BIG GRIN>. Sounds like a perfect trade to me!!! When
I get back, I'll email you the kitchen plan and we can go from there. It'll
be nice to have you help me avoid some equipment and prep station layout
