Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

I have a question regarding TFM turkey brine.

Is the 2 gallon blend the optimum quantity for a single bird, I usually
split my turkey's in order to maximize the results. As long as the birds are
completely covered with brine, then I stir up / move around the halves once
or twice a day. Stirring seems to maximize the flavor.

I just use enough to cover the bird. Using more doesn't gain you
anything.

Yep. What he said. It all depends on the size of your container I reckon.
If you had a ziploc bag large enough for your bird, a half gallon would
suffice.

Yea, and when a wing tip or something pokes a hole in the bag, you have a
big mess and your kitchen looks like Nick's. Plus he recycles ones he's
already used for grass clippings and dog doo.
