Anybody have recipes calling for juniper? How you you use them?

Default Juniper Berries

I have seen them in the last few years in a lot of marinades. They are used
to flavor gin, so think of that when you add them to a marinade.

They are wonderful on a steak, and in any marinades for beef (kabobs, etc.)

Junipers berries are used to make gin. I use them in a marinade
consisting of buttermilk, juniper berries, peppercorns and rosemary for
deer. The deer marinates for three days and is simply wonderful. I
suppose you could take a cheap cut of beef, marinate it and then smoke
it, as well.

I used them on steaks yesterday. I ground the berries to powder, then added
some Old Bay Seasoning, olive oil and pureed fresh garlic, and brushed it on
a couple sirloin tip steaks. I grilled them over lump at about 350-400. They
were wonderful.

Every time I grill at this temp, I throw some big chunks of apple on the
coals immediately *after* removing the steaks, then shut the Kamado down.
The residual heat from the coals, and the lack of air, thus create more
lump.
