Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

Anyone have any really good country rib recipes? Are brining country
ribs a good idea or are marinating them a better way to go?

I like to marinate them in the Fat Man's Citrus Brine for 2 days.

I like to just rub them, but brining or marinating will work. Matter or
personal taste.

I like to season them with salt and pepper, cook them at 350 or so and brush
before and during the cook with "Carolina Treet" bbq sauce. Throw a chunk of
hickory in those coals, too.
