Today, I handed the City of Wenatchee a check for $2405.99, and they handed
me my building permit. We actually began moving dirt at around 1:00 pm. The two houses on the property were demolished within one hour --- ahhh, the power of big hydraulic excavators. The huge rock outcropping was being hammered down in good time, and the nuisance trees were knocked over and moved to the debris pile. I expect that tomorrow we will have completed: 1. the primary grading on the lot 2. the driveway and parking lot base will be laid down and compacted 3. the excavation for the building's pad will be done 4. the pit for the 1000 gallon grease and oil interceptor will be dug, and the interceptor put into place 5. the stormwater collectors will be in place 6. the stub-outs for the water and sewer will be brought up to the building pad site I've got pictures that I'll post in the next few days. I'll also post pics of the new pit that will be going in the restaurant; it was delivered from Cape Girardeau, Missouri on July 3rd. All 2400 pounds of it ( the kamado #7 was NOTHING to move compared to this big dog). Oh, and I should have a firm opening date to announce by next Wednesday. Dave |

And I'm sure the burner will also be useful for jerky production. One thing's fer sure, though; I won't be able to duplicate Jim's Lazy-Q methods. The chimney and intake is thermostatically set to shut down if the temperature exceeds 350F, even though the firebox is 5/8" steel. Dave |

Can't wait to see pix of your new pit. Seems a bit ironic that you couldn't have gotten a new K#7 in the same timeframe ;-). I could wax poetic about the pride that we all feel hearing of your progress.....but I think I'll just put a Fat Tire in the reefer to drink to you later. John in Austin |

We have our own strange rules ;-) Heck, Ag, you need to come apprentice with me for 6 months (no pay, of course) before giving you the complete plan. How am I ever going to get free labor if I just give the thing away? :-) Seriously, I'd be happy to consult with anyone who is serious about opening their own 'Q joint. And there are others, like Chef Juke and Big Jim, who are dang generous with their time that have high levels of experience and expertise in this type of gig. |
