Must have been something stupid I was overlooking. But yes in a practical sense it wasn't a big problem as that temp was fine for the food. And again near the end of the cook the temps seemed to get higher much easier. Not sure what was different but I'm sure Ill figure it out. Jesse |

Realize now I should have let the fire completely get hot before closing it. Later on in the cook the coals finally got nice and white hot and from then on things acted a lot more like I had expected them to. Jesse |
