Default finally, a stable pit

After months of working with this thing (mainly to seal up air leaks), my
brick pit is working like it should. It came back up to temp within ten
minutes of adding two pork shoulders and it has been holding steady at 250
with no fuel added for about an hour and a half. The way it is going, I
should be able to go another 30 minutes to an hour before adding anything.

Just had to share the joy

Yaaaay, shoot, bet you get so you go an hour (or more) between re-fuels.
Started a butt this morning and am using oak logs. They burn long and the
extra smoke doesnt hurt a butt. Last one got a bit hot up to 375F, but with
butt, thats ok too. At noon am putting on some ribs then a chicken. Gonna
eat big tonite!

going an hour and a half to two hours between fuels. This is great! I can Q
and have a life. I have used a lot less fuel than I used to as well. The
only downside is I have burned some wood to keep the fire going that never
got used as coals. On a big burn, I could use those coals in my ECB.

Hope everybody has a great Labor day,
