Started out making coldcut sandwiches in the meat market. It was just a matter of time before someone asked me to make him a hamburger. (The kitchen was already in the building) The town, Frost, TX Pop: 700 or so didn't have a restaurant, so word started getting around that we would make a hot lunch if asked. Before we knew it, it was BBQ 2 days a week, CFS on Thursday, Ribeye on Friday. and whatever we had left on the other day. It was easier to just make a daily special, rather than cook 100 different dishes for our customers. Ended up with a 10 foot steam table for the sides, a deep fryer, and pizza oven. Pizza and fried chicken in the evenings. (made to order.) Had a lot of fun running that joint with my father. When Mom died, he didn't have the energy to work with me anymore, and rather than trying to hire some help, we decided to sell it. |
