Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

Default ? Pinapple rings

There was a conversation here about grilling pineapple rings.
It sounds like it would be good.

I plan to grille steaks this weekend, and would like to try it.
About how long does it take to do the pineapple; are they
cooked all the way through, or just heated.

It seems to me that they should be cooked through, and
even that shouldn't take long, depending on the thickness
of the pineapple. I was thinking maybe 1/4 to 3/8 inches.

Any advice?

Thanks in advance. Bob-tx

A real man eats his pineapple like his steak, raw.

I used my vegetable grate thing we got for grilling and just cooked em
till the outside was seared, which with all that sugar is pretty easy.
The idea isn't to cook it, but as you are guessing, to get a *bit* of
sear on it. They end up warmed through.
That's my approach anyway. I just did what seemed to make sense. SWMBO
handed me some rings and asked me to grill em, I said "okay" .
*shrug*.

You could puree them, add some starch and mold em into funny shapes
and bake em for all I care. I won't say you're wrong. Wierd, but not
wrong. <bg>

You want to caramelize the sugars on the outside. They will be warmed, but
don't have to be cooked through. Try them at a couple of levels of doneness
to see what you like. I think they are yummy for a dessert.

Sounds good. Do they need to be eaten hot, or are they just as tasty when
cool?

It really is pretty much no-fail. Grill like a steak (we do them about
1/2 in thick), get a little caramelizing on the outside, inside is hot
and tender, and profits from being served warm. FE: Chop into chunks
while hot and serve over vanilla ice cream, with a Hazelnut stick on
the side (I think they are sold under the name Pirouette). Pineapple
grilled so is exceptionally good with ham steaks, with sweet potato on
the side. Yum!
