Default Slow Smoked Beef Short Ribs

Slow Smoked Beef Short Ribs
(If ya missed it back in 2000)

Marinade

2 cups soy sauce
2 cups Jack Daniels
1 cup Sriracha sauce
½ cup oyster sauce
juice of 2 lemons
16 cloves garlic, minced
4 Tbs paprika
3 Tbs cilantro, chopped fine
2 Tbs black pepper, fresh ground
1 Tbs fresh ginger, ground
2 Tsp sugar
1 Tsp white pepper, ground

5 to 6 pounds bone-in beef short ribs, cut between the ribs

The night before the barbecue, combine all marinade ingredients,
except the Jack Daniels, in a lidded quart jar, adjust all
quantities to taste, then mix in the Jack Daniels and let it sit
overnight. The next morning, put the ribs in a plastic bag and pour
the marinade over them. Tie the bag closed. Turn the meat every ½
hour while you’re getting the smoker ready.

Prepare the smoker for barbecuing, bringing the temperature up to
200° to 220° F. Remove the ribs from the plastic bag and pour the
marinade into a saucepan. Transfer the ribs to the smoker, fatty
side up. Add a pouch of hickory chips to the fire box to add smoke
for the first hour. Bring the marinade to a boil then reduce the
heat to low and keep it well below a simmer. During the second hour, add
Kaffir lime or other citrus wood for the second layer of smoke. During the
third hour add baby coconut rind for the third layer of smoke. I figured
that just like you layer seasoning, you can layer smoke and it tastes
great. Cook the ribs for 4 to 5 hours or until 150° to 155° F. inside,
mopping every hour with the marinade.

Remove the ribs from the smoker and let them rest for around 10
minutes. While they’re resting, add some ketchup and a little honey
to the remaining marinade to taste and use it as a dip.

Serves 6.

BBQ Rib 1 showed the rig just before the first mop.
BBQ Ribs 2 showed the temps on the grill, ca. 300° F. by the firebox and
200° F. by the stack, with the NB thermometer reading 250° F. Note the
inverted NB logo, proving this a work of Nick!

PS They turned out great!

enlighten me as I may be able to obtain an equivalent !..

Hi Barry, Sriracha is a Thai moderately hot chile sauce. If you have a
Thai/Asian market within 150 km, just ask for it by name. I can't recommend

Thai/Asian market within 150 km, just ask for it by name. I can't recommend

Well...Here I am..10:05 PM Friday night...at the computer..looking for an
easy recipe using Rump Steak I just defrosted...Looking for a 'Stir

Well...Here I am..10:05 PM Friday night...at the computer..looking for an

Many big box markets and virtually all 'asian' markets will have sriracha on
the shelf. It is a red pepper sauce of about the same heat as Tobasco but
with a much milder vinegar taste. I prefer it over Tobasco and it's spinoffs
for that reason because I don't like much vinegar. Also it has a little
thicker
consistency then Tobasco, but not as thick as catsup. While you're at it
pick up a jar of 'asian chili sauce'. It's thicker yet, has some pepper
seed
showing and it's great on eggs and sausages. If you're a habeñero fan
neither of these products is going to take you there..
