Default Char Broil Electric Smoker

Hi all,
Bought one of these the a while ago and have used it whith good success. My
question, do you "HAVE" to put water in the pan? I have seen and read that
water vapor will mess with good BBQ. I was thinking of doing a butt and
want good results. Drop the water?
Mark
