Being mostly Q-deprived in the Northwest I was surprised to find that many
of the larger Safeways in the Seattle area have, at their "carving station", brisket on Tuesday night. $5.99/lbs. I tried it and found it a bit dry but amazingly good. A real smoke ring and a nice cut of meat. The tag on it said "Sadler's." I asked how they get it and they say it comes frozen. They thaw it and heat it up. I asked if I could buy it bulk/frozen and they said yes. So I bought a large brisket, they sliced it frozen and vac-packed it into individual 2 pound baggies at no charge. I googled Sadler's and came up with this: http://www.sadlersbbq.com/ So it seems it's the real deal. Thing is, when I thawed it, wrapped it in foil, added a bit of water and slowly brought it up to warm it was much more tender than what Safeway was serving under their heat lamp. This stuff is really good and if you're too lazy (Like I am sometime) to do your own this is good stuff. I'm told that Sam's club carries it but I'm not a member so I can't verify that. I wish Costco would. Anyone else heard of this product? Peter |

RThwew is no btand marked, but it is USDA CHOICE.

When I visited my brother outside Portland all I could find was a small
square "thing" that had all the fat trimmed off. I told the butcher that I wanted a 12 pounder and keep the knife away. He told me that is the way they come in, but he cuts them in half and trims all the fat off. I've heard great things about Dave's place. I do do some of it myself. I'm
just comparing the NW with, let's say, Texas (where I spend a good deal of time). While not my favorite place on earth it's nice to have Q joints as common as Thai places or lattes in Seattle. I don't mean to bash newsgroups. I have learned a lot, here and on others. But sometimes the replies get so off-track that you can't really know what the original thread is about. It also descends into needless name-calling sometimes. What's wrong with a little civility? Thanks for the reminder of Dave's. Gotta get over there!
