Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

Default Best Barbecue Restaurant Location

The absolute best barbecue I've ever had was served at 'The Wise
Shepard' in Azerbeijan. However I can't post the methology used;
ingredients; types of rubs; marinades. It's not because I never went
through a series of arguments, fights, duels as well as an arm
wrestling contest to obtain information; I was also sold to the
Corsicans so they could hold me for ransom. I excaped and went back to
'The Wise Shepard' and demanded recipes. So now they honour me and
give me this 'mi casa es su casa' chit but of course they say it in
Azerbeijani. Not many men excape Corsican kidnappers so I became a
guest of the President and presided over many of his political
detainees torture. Eventually after a few months I bowed out and took
recipes out of the country and back into mine. I won't make these
available on this NG though because the clique here thinks that it all
ends with 'Southern Style' barbecue.
You've never had sheep stomach stuffed with congealed blood, fat, lungs
and various meats from the head and face of sheep until you've had it
done the Azerbeijani way. They don't use a grill but rather an open
fire. Two political detainees hold this dish over the smoke and flame
and rotate as neccessary. They don't use a rotatable spit because the
Azerbeijanis believe in purism. Some won't even use a stick stuck
through the stomach. They just hold it with their hands and when their
hands are toast others are placed into this most important role.
