Got my IPA cherry popped by Goose Island...Tasted like a Christmas wreath
done up "Fargo" style...

Do other IPAs have such a 'piney' taste?

One of the joys of craft brewing is that there are no set recipes (in a style)
and each brewer can pick and choose among various malts, yeasts, and hops to
make a beer. Two brewers can brew in the same style and come up with completely
different beers. Keep trying other IPAs and see if it's a style you like. You
should also try British IPAs, which I would call a different style from American
IPAs.

I have been told that a piney taste comes from Chinook hops (and I won't argue
if someone corrects me here).

Yeah, if I had tried RedHooks ESB, I probably wouldn't like that style
untill I had tried Bass, which I think is perfectly balanced between
sweet/bitter...I consider it the 'authentic classic standard' for that style
right now...
