I worked at a pizza place in the 80's, and fairly successfully recreated their recipe for crust and sauce, which I posted many moons ago in rec.food.recipes. SOURCE: King Arthur Flour Pasta per Pizza Pizza Dough 1 1/2 teaspoons active dry yeast 1 1/2 cups warm water 3 1/2 to 3 3/4 cups all purpose unbleached flour 1/2 teaspoon salt 1 teaspoon olive oil In a large bowl, dissolve the yeast in 1/2 cup warm water. Allow the yeast to proof until it is foamy, about 10 minutes. Add the remaining 1 cup of warm water, combining it well with the yeast. Add 3 cups of the flour and the salt. Mix the dough with your hands or use a mixer with a dough hook, adding the remaining flour as needed to make a dough that holds together. Place the dough on a floured surface and knead it for about 10 minutes, or until the dough is soft and not sticky. Grease a bowl with the olive oil. Put the dough in the bowl and turn a few times to coat with the oil. Cover the bowl tightly with plastic wrap and let it rise for 2 hours in a warm place. Punch down the dough and knead it for a few minutes on a lightly floured surface. Use the dough to make on large thick pizza or divide it in half to make two small thin ones. |

Simple but effective. Pizza Dough Enough to make 3 pizza stone size pizzas First, proof the yeast by putting 1 envelope of yeast and 2 tsp sugar in a 1 cup glass measuring cup, add hot water from the tap ( about 115 degrees, but I don't use a thermometer, just hot water) let it sit 5-10 minutes, while you mix the flour and stuff together. When it forms a fluffy layer on top, add 1/4 cup olive oil to it, pour it into the flour and form a dough. Whisk these next 3 ingredients together in a big bowl: 3 1/2 cups flour 1 tsp salt 2 tbsp sugar May need a tsp or more of water. It should form a ball or mound, spread olive oil all over it, and cover. Let sit for 2 hours until doubled and punch it down, repeat. Roll it out with flour, I bake them at 425 for 15-20, depending on the toppings and what pan I use, etc. Enjoy! KW |
