I want to buy a hand-cranked pasta machine. Do you have any recommendations or comments.

My only comment is to get one powered. Much easier to work by one person.

If you have a Kitchen Aid mixer, get the attachment.

Thanks for the advice. I don't have a Kitchen Aid, and am trying to reduce my carbon footprint.

I found it impossible to hand-crank solo; I needed another person to handle
the dough - IOW 4 hands.

Another thing is that: I carried that around for years, and it's still
stored somewhere here in the house, but I never found an appropriate place
to clamp it down -- it would not either clamp onto the counter/table I was
using -- or if it did clamp to something, that particular something wasn't
big enough to work on.

I now have the attachment for the KitchenAid mixer. Mario Batali uses the
KitchenAid pasta attachment, even though he demonstrates on his older
cooking shows how to make the pasta itself by hand.

I think you can probably go to youtube, if you haven't already and see some
demonstrations of all three: without power, with power, and KA with
attachment.

I have a hand-powered "Norpro" "Pasta Machine". It works like a
charm with just two hands. You do however need a great deal of
counter space to accomdate all the pasta dough as it's being worked
on. But the results are very satisfying. :)
