Default Cheese graters

What's the latest. Our zyliss drum grater has disappeared and we're
trying to decide between a drum grater, a box grater, and microplane.
We grate cheese for the occasional cup and over our pasta at the
table. Suggestions welcome.

Microplane is great for parm and other hard cheeses, zest, and ginger. It
works less well on softer cheeses like jack. I like the handle on mine, but
I understand that some find it too large. I like having a good box grater
too for things like carrots.

Microplane is great for parm and other hard cheeses, zest, and ginger. It
works less well on softer cheeses like jack. I like the handle on mine, but

For hard cheese the microplane is great. I got mine from Lee Valley.
www.leevalley.com Hard cheese is fluffier and finer and has a better taste
that way, IMO.

For hard cheese the microplane is great. I got mine from Lee Valley.

Exactly. And keep a box grater around for larger quantities and shreds, as when
making risotto.

I haven't found a drum grater yet that both works well and is easy to clean. The
Zyliss and most other have support bars inside the drums that trap cheese
particles and are a bear to get really clean.

I haven't found a drum grater yet that both works well and is easy to clean. The

I have a Microplane which zests lemons and finely grates ginger and hard
cheese. You can buy coarser ones, too. I have a box grater for larger
shreds of cheese or carrots,
etc., as well as a Mouli drum grater. I hardly ever use the Mouli.

I have to second the microplane recommendations. I have both
a fine and a coarse. Use the fine for hard cheeses, the coarse
for softer cheeses. If you can only afford one, get the coarse
as it's the one I pull out when I need to grate both hard and
soft cheeses. The soft cheeses will clog the fine, but the coarse
will work just fine with the hard cheeses. They also clean up
really fast easy, especially compared to box graters.

I, too, am a microplane plane fan. Both the fine and medium, do,
however, shred hard cheeses to a rather "fluffy" texture. And, they
work less well for soft cheeses.

Microplanes are more effective than even good quality box graters
because the teeth are cut and honed slightly and not just punched out.
Microplanes were designed for fine woodworking where smoothness of cut
is very important. With some pride, I "discovered" microplanes as a
food grater long before they were marketed that way. I have a
woodworking shop, and one day said, "Hmmm, this might be great for
parmesan." I was right.

Microplanes absolutely cannot be beat for citrus rinds. For some
reason, they never cut beyond the topmost peel level with none of the
bitter pith. They do not however, give you long shreds for decorative
or thicker peels.

I prefer the old box grater for thicker, more substantial cheese
threads, for tacos for example. The microplane is too fluffy, but
some may like it that way.

Both are so cheap, I wouldn't want to be without a microplane AND a
box grater.

The great news is that there are no "IN" brand names. Like the very
silly Zero King and Viking "home" appliances.

We also have two microplane graters and a box grater. I'm the type that
tends to grate my knuckles when using the box grater. If my husband isn't
around to grate cheese (cheddar and the like) I use our salad shooter with
the grating attachment. Does a fine job.
