I am looking for an on-line source of French, blue steel saute pans, with cast

Blue steel, black steel, carbon steel... what's the difference? You might want to look at the de Buyer site for some description of their different lines. They're at www.debuyer.fr. In the past I've gotten some locally from La Cuisine in Alexandria, VA (they also have online and mail order). They're at www.lacuisineus.com. And I know Bridge Kitchenware carries them. They're at www.bridgekitchenware.com. The pans come in different weights with different handles. The de Buyer site is a good place to see what the difference are. I have some of the lighter weight with steel handles and some of the real heavy weight stuff with the cast iron handles. The later I got at La Cuisine. |
