Hello.
I am having a group of new friends over for a game night next weekend and one of them is diabetic. Looking for suggestions for easy-to-make finger foods she will be able to eat. I'm not much of a cook so the simpler the better. Help! Thanks! -Newsgirl |

There isn't one diabetic diet. She may low-carb or maybe she injects insulin and eats what she wants or maybe something in between. Have you asked her? Priscilla, type 2 |

You'll need to ask her what type of food plan she follows.
It may be lowered carb... or lowered fat... or both ; ) Here are some ideas that should accomodate either/or. Cold shrimp. Crudites - cut up cauliflower, brocolli, green beans. What kind of dip will depend on which plan she's on. For those who asked ... no I didn't ask her because she's coming along with another friend. She's not someone I actually know so I won't have an opportunity to ask. Just wanted to have some things on hand and you've given me some great suggestions. Thanks! |

I generally do not eat snacks aside from my bedtime snack. At parties and such, I usually eat nothing at all. I might have had a cube or two of cheese (prior to learning of my dairy allergy), a few plain nuts or some raw veggies. Nothing more. Some people might eat meat. I don't. Try Nachos. get round Tostitos.
place a chunk of chedder or colby cheese on each one. Top with salsa or jalapeno pepper. Heat in 350 oven utill cheese melts. You can get 30 on a sheet. Terrible suggestion for a diabetic snack though. I always like celery

Corn chips spike me hard. I can be at a normal level then eat a bag of
chips from a vending machine and in a couple of hours I'll be in the 200's easily up to 250 if I just sit around after eating. (Type II) I'm guessing that other people have different reactions, but that is mine. A single serving bag of say Doritos will push me way over the edge. Make it on the day - it won't keep long in the fridge unless you add lots of citrus. My Cheesy Guacamole 1 moderate size ripe avocado. ¼ to 1/2 cup chopped celery ¼ cup chopped onion ¼ cup chopped red capsicum (bell pepper) 1 chopped hot chili pepper (to your taste, or chili flakes) ½ minced clove of garlic 30g chopped cheddar cheese 30g light philadelphia or ricotta or cottage cheese 2 teaspoons grated parmesan a squeeze of lemon or lime juice 1/2 tsp minced/grated ginger (optional) salt and pepper to taste All ingredients are extremely approximate and dependant on what's in the fridge. The avocado, some cheese and citrus aren't optional, everything else is. Peel and seed avocado, mix all ingredients. Adjust dryness with a little olive or peanut oil if necessary until a smooth paste is obtained. If using a food processor, add the solid vegetable ingredients last and process briefly to retain some texture. Serve with slices of carrot, celery or similar for dipping. Low-fat crackers may be OK depending on your carb requirements. Carbs, fat etc - not the faintest idea (low, and depends how much you have and whether you use veges or crackers to dip).
