Default crockpot recipe

If you can tolerate beans in your diet:


Crockpot Butter or Lima Beans


1 large yellow onion -- chopped
3 cloves garlic -- minced
3 cups butter beans -- or lima; fresh, canned or frozen ( thaw )
28 ounces canned diced tomatoes -- with juices
1/2 cup minced fresh parsley
salt and pepper to taste

1. Sauté the onion in some oil in skillet until softened, then add the
garlic and cook until the garlic is softened.

2. Place the sautéed mixture to a 3 1/2 - 4 quart slow cooker and add the
beans, tomatoes with their liquid. Stir well to combine.

3. Cook on Low for 4 to 6 hours. Season to taste . Just before serving stir
in the parsley.
Yield 4 servings

We don't seem to get a lot of recipes here. I don't do low carb and my
recipes are mainly vegetarian. I also have food allergies so while I might
occasionally post a recipe, most of what I eat wouldn't appeal to most
people. I tend to get a lot of my recipes at various online places,
including allrecipes.com. They are good to give you a breakdown of carbs
and such. I don't generally use "diabetic" recipes because for some odd
reason they are usually really low in fat, high in carbs and some sort of
weird dessert item. Why do they think we diabetics want lots of desserts?
I don't. I want REAL food.

I appreciate the recipes. That one just didn't appeal to me.

I'm a Type 1 on insulin and I love beans. I usually handle carbs well,
especially things like beans. I could definitely eat this recipe but I'd
portion it out into more than 4 servings, probably more like 6-8 as a side
dish.

What about his meter at the one-hour mark?

Most of us are omnivores, but we do have a couple of vegetarians.
