CRUNCHY FRENCH TOAST SANDWICH
 
CRUNCHY FRENCH TOAST SANDWICH

Yield: 2 servings
Source: "1,001 Recipes For People with Diabetes" by Surrey Books


INGREDIENTS

- 2 egg whites or 1/4 cup no-cholesterol real egg product
- 3/4 cup fat-free milk
- 1 teaspoon vanilla
- 1 cup corn flakes, crushed
- 1 teaspoon ground cinnamon
- 2 teaspoons granulated sugar
- 1/4 cup fresh, or frozen blueberries
- 2 teaspoons grated lemon rind
- 2/3 cup fat-free cottage cheese
- 4 slices day-old, reduced-calorie white bread

DIRECTIONS

Beat egg whites, milk, and vanilla in shallow bowl or pie
plate. Combine corn flakes, cinnamon, and granulated sugar
on sheet of waxed paper.

Stir blueberries and lemon rind into cottage cheese. Spread
cheese mixture on 2 slices of bread; cover with remaining
bread slices. Dip both sides of sandwiches into egg mixture,
then lightly into crumb mixture, coating both sides. Place
sandwiches on lightly greased cookie sheet.

Bake at 450 degrees until crisp and lightly browned,
about 10 minutes on each side.

Nutritional Information Per Serving (1/2 of recipe):
Calories: 290, Fat: 1.4 g, Cholesterol: 1.7 mg,
Sodium: 723 mg, Protein: 21.9 g, Carbohydrate: 49.5 g
Diabetic Exchanges: 3 Bread/Starch, 1 Meat

This is a joke, right? 49 g of carb? Even I don't eat that many in one
meal, and I don't do low carb!

Julie, unfortunaely I doubt it was a joke... I pick up diabetic cook books in
the store all time and I really want to know what. the heck makes them think
many of the recipes are good for diabetics...Geeshh..

I've several times had a friend try to be "helpful" and bring me
something that's been labeled "for diabetics". This has been after I've
told her what to bring to my house for dinner (in response to "what can
I bring?"). She's brought fat-free dressing when I've told her that
anything labeled fat-free likely has too much starch, because she read
in a book that diabetics can't have a lot of fat. Based on this
experience, I'm convinced that the big market for these cookbooks and
products is helpful friends and not directly to diabetics!

LOL and Moms.. My mom bought three small books, that she sent away for.. They
were filled with almost all deserts made with lots and lots of fruit.. Toooo
funny.

Oh, do i hear you!!! all those diabetic cookbooks that family buys me for
Christmas...... then people who go to the effort of making some involved
"diabetic dessert" that doesn't taste anything like the real version would
have!

so, you smile, say thankyou very much, and when the timing is right....... i
add, you know, i really appreciate the special desert you made for me, but i
think everyone would have preferred the real thing...... i can have a SMALL
piece of the real thing and i will be delighted to enjoy the meal with you
and friends...... so, just something trying to make things fairer to
everyone at the meal table, and thank you again for your special treat.....
it was very considerate of you

what do you do (those cherries jubilee in Sweet n' Low lost a LOT in the
translation (gack!))
