![]() This is a tried and true food service recipe very much like the others: Very good, but needs tweaks for diabetics. :-) Half a loaf of stale bread 10 eggs 2 cups dried bread crumbs, italian seasoned 1 cup Parmesan Cheese 2 TBS chopped garlic 2 TBS salt 1 Cup fresh basil, chopped. 1 Cup flat leaf fresh parsley, chopped 1.5 pounds ground beef 2.5 pounds ground pork. Soak bread in water until soggy. Squeeze out excess water. In mixer, combine soaked bread, eggs, bread crumbs and parmesan cheese. Mix for two minutes on medium speed. Add garlic, salt, basil, parsley, beef and pork. Mix on low speed for 12 minutes until a well-blended smooth texture is reached (if too soft, add more bread crumbs) Portion meat balls in two ounce balls. Roll in bread crumbs to coat lightly. Place on full sized sheet pan until evenly covered. Bake in oven at 450 degrees for 15 minutes. Remove and cool. Serve or Freeze. |

They're actually really good, I used to make them for the family, but now it's not diabetic friendly. I was just noticing that the recipes listed here for the meatballs have a lot of the same things in the recipes, and people agree that they're good. I think Susans' recipe will work really well and sounds good. Actually, all the recipes sound good. |
