Yes. About 6 hours. If you look on a map of Texas and find where the
Rio Grande empties into the Gulf of Mexico, I'm about 20 miles up river.
House is about 5 miles from the Rio Grande.

Wendy up here in the mountains we have had ice storm after ice storm. My
balance isn't so good anymore. I feel very unstable when I walk on ice.
In fact it is downright scary. Right now it is 14 degrees out. there is
a big storm on the way that is supposed to bring as much as 8 inches of snow
on top of all the ice we already have. The entire next week is projected
to be in the teens and below and not a single day above freezing. Today I
went to Adams and bought stuff to do some serious cooking with. Tomorrow I
will make a beef barley mushroom soup to put away in the freezer for our
lunches, and I will do laundry in between that..... Hope you do get out
and about tomorrow too!

Nyyyaaahhhhh! :-)

Hubby has a nice fire going in the fireplace woodstove insert tonight, and
it is blazing away.

Tonights dinner was very very simple. I bought natural organic local beef
from the store this morning and formed it into two large oblong patties.
Into the fry pan with just a drop of olive oil, and with the fan drawing
full speed to get all the smoke, I seared those babies on really hot for 5
minutes to a side. Just to be sure, I used my meat thermometer to make
sure they were cooked perfectly medium rare inside. Seared nicely on the
outside. Then I had fresh green beans and steamed them with just a tiny
bit of water, till they were tender. No butter or seasonings, but a bit of
ketchup for the burgers. Not too many carbs, not the most memorable meal
I ever made, and certainly very simple, but super delicious. I usually
fuss more and would make more veggies than just one, but we weren't all that
hungry and it was really perfect.

Yes. I don't know if you have ever heard of the Catskill mountains in NY
state. I am in Woodstock. That is THE Woodstock of the rock festival
fame. But it is a beautiful place, and the three months of winter are
worth the beauty of the rest of the year....... I think.

We are going to have some serious good meals for the next couple of days.
I bought some short ribs of beef today also, and I think I will make those
either tomorrow or Sunday. Anybody have any good suggestions on those? I

I don't think you could beat that combination. I've been babysitting my dog
for the past couple of days since she had surgery, and my DH has been
working very late, so I've been slack with meals for myself. Tomorrow, I
plan to roast a chicken ala Ina Garten, with fauxtatoes, and fresh green
beans. I also have some nice raspberries.

It is the Woodstock NEAR Bethel, where the concert actually was, though,
right?

Beef Short Ribs September 28, 2000

Marinade

1 cup soy sauce
1 cup good Bourbon
½ cup Sriracha sauce
1/4 cup oyster sauce (leave this out if you're Orthodox)
juice of 2 lemons
8 cloves garlic, minced
2 tablespoons paprika
1 tablespoon black pepper, ground
1 teaspoon fresh ginger, ground
½ teaspoon white pepper, ground

5 to 6 pounds bone-in beef short ribs, cut between the ribs

The night before the barbecue, combine all marinade ingredients,
except the Bourbon, in a lidded quart jar, adjust all
quantities to taste, then mix in the Bourbon and let it sit
overnight. The next morning, put the ribs in a plastic bag and pour
the marinade over them. Tie the bag closed. Turn the meat every ½
hour while you’re getting the smoker ready.

Prepare the smoker for barbecuing, bringing the temperature up to
200° to 220° F. Remove the ribs from the plastic bag and pour the
marinade into a saucepan. Transfer the ribs to the smoker, fatty
side up. Add wood chips to the fire box to add smoke for
the first hour. Bring the marinade to a boil then reduce the heat
to low and keep it well below a simmer. Cook the ribs for 4 to 5
hours or until 150° to 155° F. inside, mopping every hour with the
marinade.

Remove the ribs from the smoker and let them rest for around 10
minutes. While they’re resting, add some ketchup and a little honey
to the remaining marinade and use it as a dip.

Serves 6.

No, it is the actual town of Woodstock where the promoters of the Bethel
festival (in Sullivan County) came from. They originally planned to have
it here, but the Bethel location was able to accommodate more people. They
did have a second Woodstock festival that was actually held around here a
few years ago. This is a hippie town, but interestingly enough it
consists of several "cultures" in one. There are the old timers, farmers
and country folks who originally settled here and lived here from way back,
then the hippie and art people who gave the village its fame, and then there
are the buddhist monasteries, Zen and Tibetan. So there are the "regular"
folks, and the artistic types from NYC who come here to vacation, and the
spiritual people. I have links to all three. My fathers grandmother
was actually from here, I am an artist, and thirdly a buddhist. So
although I am not nor was I ever a hippie, I have good reasons to be here
and feel I have found my home! We really love it here. But the ice and
snow are a bit over the top this year. Usually we might get this much over
the course of an entire winter, as we have gotten in one month.

Nick that recipe sounds good, but my husband won't BBQ in the ice and snow,
and I don't have some of those ingredients on hand. I am going to look on
Cooks.com and see if they have something, otherwise I will just braise them
till they are tender in some tomatoes and wine etc.

A truly beautiful part of our country, Evelyn. I'm a Jersey Girl so I
know the area well.

I grew up on the west bank of the Hudson from Manhattan and raised my
family in the Princeton area. Two of the kids are still in Central Jersey

Oh my goodness. I am a Jersey girl too! Raised in Maplewood and lived in NJ
all my life until I met my present husband in the mid 70's. He took me
away from all that, and brought me to NY state!

That's how Sedona is. The Hippies moved into that area because of the
mystical part of it( the Vortex)... Now it is old hippies and artists that
live there...it still seems mystical Peyote was the drug of choice in the
70's there...among others The art is very expensive too. Hippies artists
have become very monetary I have a friend that went off to San Francisco
with her High School boyfriend...they came back a few years later , married
after a couple of years in Tucson, they decided to move to the Sedona
area...actually in the Oak Creek/Cottonwood Area. They found some land and
built on it. 35+ years later they have a beautiful hand built home...they
found their paradise. We went to Sedona for the first time a year ago...it
is Mystical We have a few Art/hippie areas around here. Bisbee, a small
mining town is full of art...we also have a small community that is nothing
but artists..Tubac. There is an area around The U of A where the hippies
settles...you can find allot of unique art in that area. I had a friend that
was at the first Woodstock..she said it was Mad..she enjoyed every bit of
it...well what she can remember of it...LOL.

Why do you think we no longer come to our house in the winter:-) Used to
be fn with small kids, skis or sleds and lots of board games, but no
longer and we couldn't dive it anymore. Used to spend time with y late
broher in Oneonta for a few days every winter and watched the frost stuff
kind of floatng around even on suny days inteh teens or less. I
sympathize with you!

as it was a 4 lb chicken. We had microwaved string beans and a cabbage,
tomato, radish and scallion salad with this. Also about 1/3 of a challah
roll and a full glass of a nice dry, inexpensive red wine called Mt Hermon
Red(some mix of merot, cabernet, etc>) At a little more than 1 hour by
bgs were at 89! I then shared a comice pear with my husband. Mornig bgs
87!

Yup! Not realla Woodstock near Bethel, just the place they could rent
for the concert: Yasgur's field. Woodstock off rount 28 wouldn't rent any
pace for ethe concert, but has a long reputation as an artists colony and
is full of interesting peole (like Evelyn:-) I spent my first three
summers there, but don't really remember much of it except a funny mailbox
and an empty swimming pool and collecting tadpoles in a stream until a
bull frog croaked adn I dropped the pail and ran, as I assumed it was
their mommy. Also remember itting my head on my crib when poking around
on the floor. Will, I was about 2 1/2 my last year the-)

Woodstock has had artists there at least since the 20'3 and 30's, if not
before along with those local folks. In margaretville, about 45 mins
further NW up route 28, we had some of the anti-rent peole living as
renters on the Patroon' like Livingston' s monstrous estates. Lots of
history in those mountains along with old Rip Van Winkle and his famous
bowling. We still hear that bowling in the summer months with the many
local thunderstorms.

I sure am. We lived in California for a while too, in the San Fernando
valley. Truth is that I still love some parts of NJ, especially the areas
around Morristown and Chester and Mendham..... very nice there. But most
of NJ is just too crowded for me. The traffic is brutal, the stores and
just everywhere you have to go is mobbed. Not enough places to park.....
nasty smelling air..... I am always SOOOO glad to get back to the peace of
the mountains again.

The snow is falling in earnest just now.... Looks like we are in for the
day.... :-)

I guess our roof will be delated evn further! having it redone while we
are in the city. 23 years with the old one on a 20 year roof.

For us, I think we have the ideal situation. Most of Fall, winter and
Spring in NYC with good public transprttion adn interesting classes etc to
attend adn some with parts of Fall and spring in Margaretville with no air
conditioning, and greousness all around us, even with the difficulty of
having to get others to drive us around.

Yesterday I had to go waydowntown to get to teh court area to get a
permanent release from jury duty adn found that there is a bus that goes
down there(takes forever) and I was not anticipating a good time.
Instead it was delightful as the bus travels through he whole history of
commersial and bsiness NYC, from modern, to 1920's o 19th century cat iron
buildings and way downtown some even earlier remnants. it was a total
recapitulation of NYC history and fun for the occacional trip. this would
be a great trip for a tourist is they have some information on wht they
are seeing. After conducting my busines, I walked around Chinatown (with
my faithful chariot which folds to get on the bus) buying some of those
wonderfully priced vegetalbes and fruits from street vendors and a few
specialty items, very cheap, in a local grocery store(sesame and hot
sesame oil, straw mushroom and golden mushroom pieces at 99cents a can)
I couldn't get mre because I did have to get the cart and the stuff on and
off two busses to get home. I am sure that soon, on a nice day, I will go
down again with my husband and we will have lunch togeher and then bu all
kinds of great stuff and have two of us to managepackages adn cart.

I love New York!

Nick, do you know if Arthur Ave and the lower West Village still has all
those great Italian markets? Of course, I can't buy the meats, but there
is still lots to get there. I know the area north of Canal St. on the
East side is largely Chinese now with the Italians having moved to other
places like California:-)

Hubby won't BBQ in the ice and snow? Saw a pic from a friend of mine in the
upper US. His backyard had so much snow that his BBQ was completely
covered.

Your method should give you some tender, tasty ribs. The key thing for me
was to cook them at a low enough temp that you can get the inside to where
you want it, without drying out or overcooking the outside. I like a little
bark on my ribs, but little is the key word for me. A little more bark if

You can take some dry wood chunks or chips, wrap 'em good into a packet,
using aluminum foil, poke some small holes in the top of the packet, so
smoke can get out, but it won't start burning, put it in the bottom of the
oven. Voila! Smokey flavor and NO liquid smoke!

Default New Year's black Eyed Peas

We used to Barbeque steak in Alaska with 3 ft of snow on the ground. Wayne
would stand out by the grill with his Parka on...neighbors thought we were
crazy, but hey we're from the West and steak just don't taste right unless
it is cooked on the grill

We had nothing from Hurricane Ike, but we did have some problems from
Hurricane Dolly. Our house was fine but the yard was under water and we
lost a lot of plants and had to have a whole bunch of fence posts
replaced. Others here didn't fare as well and had to replace their
roofs. There are still people waiting for FEMA to come through. Some
people were with out power for days. We didn't lose power, thank goodness.

Our town was right in the eyewall of the hurricane and we got 28" of
rain in a couple of hours.

Jacquie, he doesn't mind grilling if the snow is ON the ground, but when it
is still falling from the sky he balks at it! Especially since he doesn't
like to shovel the snow off the deck, which is where our grill is. But
it's OK, most of the time he will grill stuff if I ask him.
