I found a jar of vodka spaghetti sauce I bought a while ago and forgot about
because it was pushed behind the herbs and spices. The expiration date is April 2006. Question, it's all sealed, completely unopened, would you eat it? kili |

Those expiry dates on canned goods are just guidelines for how long something is likely to be at peak quality. They do NOT mean that the goods are spoiled the day after. Lots of them say "Best if used by _______." Operative word there is "best." Unless the can is bulging, you're fine. In the UK, for example, there are several kinds: * "use by X": it can be dangerous after X even if it smells and looks fine; * "best before X": it won't be as good after X, but you wouldn't want to eat it by the time it became dangerous (e.g. mouldy bread); * "display until X" and "sell by X": instructions for the shop staff. http://www.eatwell.org.uk/asksam/foo...terms/#A220019 On a jar of sauce it's probably the equivalent of "best before". Personally (YMMV and I'm not liable for this!) if it looked and smelled OK I'd eat it several months after a "best before" date. |

I can't find any jarred/bottled food product that uses the term "expiration date". Even my jars of Claussen pickles that say "refrigerate at all times" do not have an expiration date, they're marked with a Use By date. I've eaten those pickels long after the use by date, only thing I noticed is they're slightly less crisp... in fact when I finish a jar I add kirby cukes from my garden to that brine and in a week I have nice pickles... I often reuse that brine over and over all through my cuke growing season. I have two jars of cukes in reused Claussen brine fermenting right now... sometimes I add a tsp of kosher salt, a smidgen of pickling spice, a crushed garlic clove, and a pinch of dried dill weed... just to kick it up a notch. BAM! Nice wide mouth glass jars ain't easy to come by so why not reuse them... with pickles mostly what you're paying for is the glass jar and of course the transportatiuon and all the wholesale and retail profits... what's inside the jar is of inconsequential cost, could be plain air and it wouldn't change the cost of that jar. There's hardly any food products in glass anymore, they've about all gone to plastic. I noticed that even Hellman's mayo is now in plastic... good I saved a bunch of those jars. Plastic is cheaper and eliminates breakage. Sheldon |

I guess it could be real dangerous if I ate it a second or two after the prescribed time! ;-) I'm sure they don't really mean that, especially down to the second. It serves two purposes, one to give an indication of best quality, and also to provide them with a time stamp of when it went down the production line. They just have to back up the stamped "best by" date and time to find the production date and time. It is confusing though. I just finished some "Best by Sep 02 02" grits this morning. Only a few months past the date they've slated the product will be at its best in flavor. As long as the bottle or can isn't swollen or oozing or rusted, or the product has drastically changed in appearance and stinks...it's fine. |

Right now I'm trying to use up a lot of jars starting with the earliest. Barbecue sauce also, I've several plastic bottles of Cattlemens I must use up!
