Default Rec: Beefy Beer Delight in Crockpot

I saw this on alt.food.recipes and it sounds so good that I wanted to
share it with you. Unfortunately, I do not understand the part about
the "purchase."

Beefy Beer Delight in Crockpot

purchased from Bivins Estate in Dallas, Texas

3 pounds bouneless chuck, cubed
1/2 cup flour
1/4 cup salted butter, melted
1 large white onion, sliced
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 clove minced garlic
2 cups dark beer
1/4 cup flour

Coat beef with flour. Brown in melted butter. Drain off excess fat.
Combine meat, onion, salt, pepper, garlic and beer in crockpot. Cover
and
cook on low for 7 hours. Turn control to high. Dissolve remaining
flour in
small amount of water. Stir into meat mixture, cook on high 30 40
minutes.

Those who might want to make it a little more complex could look up
"Carbonnades a la Flamande" or something close to that. Belgian beef
stew with beer. This link goes to a typical recipe, which is quite
good. There's also a classic version in one of Julia Child's early
books. Delicious stuff, especially when the weather gets a little
cooler. -aem

I make a very good pot roast a lot like this--only I use 1 can tomato
soup, one bottle of beer (fosters is my favorite), and a couple of cans
of whole tomatoes. Throw in garlic and a couple bay leaves--and have
about 3 or 4 big vadalia onions and carrots.

Great stuff!!
