Homemade. I follow Alton Brown's recipe, shown at
http://www.foodnetwork.com/food/reci..._16262,00.html. However,
I usually use champagne vinegar (as he actually recommends on the show)
rather than white wine vinegar. It's really not all that much trouble to
make, and I think the results are definitely worth the effort.

I like to customize both potato salad and macaroni salad to go along with
whatever else is being served. That may or may not include modifying the
mayonnaise recipe.

that is a subjective question. Some like hellmans, some miracle whip or a
combo of both. But Hellmans is the mayo of choice to most who try it.

But I find "1 cup oil, safflower or corn." If you want tasty mayo you can
use olive oil.

LIke it was said; it's a matter of taste. Hellman's seems to be the
leader in store boughts. Miracle Whip (which my wife swears by in her
cole slaw) is too sweet for my taste in potato/macaroni salads.

Yes, if it's made properly. If you skimp on the egg or if you don't
establish a good emulsion before adding the oil, you can have problems. I've
kept homemade mayo for a week with no problems at all.

Make it yourself. It is easy. All it needs is a blender or food
processor, some egg yolks, bit of lemon juice, mustard, salt and
pepper, and about 5 seconds to do it.

There is only one brand out there.. "Dukes"

Don't let those yankees mislead you with that other miracle stuff etc

Homemade would be ok if you don't have Dukes... like if you're on a

I've never had homemade, but I suspect that will be the main answer.
Failing that, I'd say "Best Foods" aka "Hellman's", at least here
in the U.S....

Sounds like you earned that. ;-)

Lots of sugar (and fat combined) will make me very ill too.
I still remember eating that sugar goose from my birthday cake when I
was 5. Made me very sick!

If I do eat cookie dough it's in very small amounts!

The next time food made me (seriously) sick that I can recall was a 4th
of July celebration when I was in my early 20's. Hot dogs, potato chips
and root beer. ;-p

I was sick for about 3 days! <sigh>
I've not touched potato chips or hot dogs since, except for the
occasional Boars Head brand frank. But, those are not anywhere near as
greasy. ;-)

Hellmann's mayo is also bottled as Best Food's mayo depending on where you
live, iirc.

So here';s my question.

I LOVE making homemade aioli - basic stick-blender mayo with 4 clvoed
of roasted garlic whizzed in - but I know how high=fat it is.

When I buy commercial mayo, I like Hellmans (Best Foods) lowfat - used
to be called Just 2 good but now it's called lowfat I believe. not
light mayo, but reduced fat. Only 2 grams in a tablespoon, I believe
largely due to the amount of water that's added. Is rthere any way to
reduce the fat in homemade mayo? Or do I just have to stick to eating
it when i'm willing to indulge a little?

I LOVE using my aioli on (soy) bacon /avocado / lettuce / tomato
sandwiches on whole-grain toast. one of my favorite treats for lunch.
We also use it with steamed veggies, esp. artichokes or asparagus.

Yes, I have a view of Catalina Island so I'm as far west as one can go
without falling into the Pacific. You can see how much I know about
mayo. After losing 45lbs. (and keeping it off) on WW I only eat fat
free mayo-like products which according to friends and family is
disgusting so I don't use it when cooking for others...
