However, I usually use champagne vinegar (as he actually recommends on the show) rather than white wine vinegar. It's really not all that much trouble to make, and I think the results are definitely worth the effort. I like to customize both potato salad and macaroni salad to go along with whatever else is being served. That may or may not include modifying the mayonnaise recipe. Bob |

LIke it was said; it's a matter of taste. Hellman's seems to be the

If you skimp on the egg or if you don't establish a good emulsion before adding the oil, you can have problems. I've kept homemade mayo for a week with no problems at all. Bob |

supermarket-Von's. I wonder if they have it at a fancier market (here, Bristol Farms)?? Yes, I have a view of Catalina Island so I'm as far west as one can go
without falling into the Pacific. You can see how much I know about mayo. After losing 45lbs.
