Default saving pumpkin

I got two medium sized sweet pumpkins out of my garden this year (they
were supposed to be cantelope, it's a long story) and they've been
sitting on my counter for the last month or so.

Can these be kept in the fridge? Or will that cause them to go spongy?

I'm not a pie person, so I don't want to just make puree out of them. I
like to cube them and bake them with herbs. Is it possible to just cube
the flesh and freeze it or should it be blanched first, or what?

Finally, does anyone have any favorite recipes for savory (not dessert)
pumpkin dishes?
