Default coca cola cake recipe anyone?

Does anyone have the coca cola cake recipe? I do have it but have misplaced
it and have never made it. The Cracker Barrel Restaurant serves it at
certain times of the year, and it is just delicious. Just before serving
they put a piece in the microwave for a few seconds, and then I think they
serve it with vanilla ice cream. The chocolate cakes melts in your mouth.

Coca-Cola Carrot Cake

none

----CAKE----
2 cup flour, sifted
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoon cocoa
3 eggs
1 1/2 cup sugar
1/2 cup vegetable oil
3/4 cup coca-cola
1 1/2 teaspoon vanilla
2 1/4 cup raw carrots, grated
1 cup nuts, chopped
1 cup coconut, flaked
----COCACOLA SYRUP----
3/4 cup sugar
2 teaspoon cocoa
6 tablespoon coca-cola
6 tablespoon butter
1 tablespoon light corn syrup
1/2 teaspoon vanilla

Mix all the dry ingredients together. Beat the eggs well; add sugar,
oil, 3/4 cup cola, and vanilla and beat well. Stir in the dry
ingredients until smooth, then add the carrots, nuts and coconut. Mix
well. Bake in a greased and lightly floured 13 x 9 pan in a preheated
350~F oven for 40-50 minutes, until cake tests done. Remove from oven
and prick hot cake all over with a fork, then pour the cola syrup
slowly, evenly over the top. Serve warm or room temperature with
lightly sweetened-vanilla flavored whipped cream.
Coca-Cola Syrup: Combine sugar, cocoa, cola, butter and corn syrup in
saucepan; bring to a boil over medium heat, stirring constantly. Boil,
stirring, until thick and syrupy, about 5 minutes. Add vanilla
extract. Remove from heat and pour, hot, over hot cake.

Yield: 16 servings

Brazilian Iced Chocolate - With Coke

none

2 oz unsweetened chocolate, (2-1 oz squ; ares)
1/4 cup sugar
1 cup coffee, double-strength, and
2 1/2 cup milk, hot
1 1/2 cup coca-cola, chilled
1 whipped cream, or vanilla ice crea; m

In the top of a double-boiler over hot water, melt the chocolate
squares. Stir in the sugar. Gradually stir in hot coffee, mixing
thoroughly. Add the milk and continue cooking until all particles of
the chocolate are dissolved and the mixture is smooth, about 10
minutes. Pour into a jar. Cover and chill. When ready to serve, stir
in the chilled Coca-Cola. Serve over ice cubes in tall glasses. For a
beverage, top with whipped cream. For a dessert, add a scoop of
vanilla ice cream.

Yield: 5 cups

1/2 cup miniature marshmallows
1 tsp. soda
2 eggs
2 1/2 tbsp. cocoa

1/2 cup buttermilk
1 tsp. vanilla
----COCA----
6 tbsp. coca-cola
2 1/2 tbsp. cocoa
1 cup chopped pecans
1 stick butter
1 box confectioners sugar
1 tsp. vanilla

Combine butter, cocoa, oil and cola and bring to a boil. Add other
remaining
ingredients in order named.; beat well. Pour into a large greased and
floured sheet cake pan. Bake in 350° oven for 45 minutes. Spread Coca-
Cola
icing over warm cake.
* I used 2- 8” pans instead of the sheet cake pan.

COCA-COLA ICING

Bring first 3 ingredients to a boil; add remaining ingredients and beat
until smooth. Spread over warm cake.
*For my icing, I used 1/2 butter and 1/2 shortening, eliminated the
pecans.
I
creamed the shortening & butter together, added the vanilla, cocoa, and
Coke, then added the confectioners sugar. Mix well.

I think so; it was rich, moist and very choclatey. But it was the
microwaving for a few seconds that did it. That made it warm and moist. It
had no frosting on it (and needed none) and cut into a square.

Some people use 'cherry' coke and i have tasted one made with "Dr.
Pepper" that while of a distinctive taste i would not be inclined to try
to duplicate.

I occasionally purchase a 'red devil' chocolate cake that i like and
which, iirc, uses sour cream in the recipe.

Cracker Barrel Old Country Store Coca Cola Cake Recipe
Serves/Makes: 10

Ingredients:
1 Stick Butter
1 cup Coca Cola
3/4 cup Miniature Marshmallows
1 Square Semi Sweet Baking Chocolate
1/2 cup Shortening
1/2 cup Vegetable Oil
3/4 cup Cocoa
2 Eggs
1/2 teaspoon Salt
2 teaspoons Vanilla
3/4 cup Buttermilk
2 cups Sugar
2 1/3 cups Flour
1 teaspoon Baking Soda
1 1/2 teaspoon Baking Powder
***Frosting***
1 Stick Butter
1/2 cup Cocoa
1/4 cup Coca Cola (plus 2-3 Tbsp. if needed)
3 cups Powder Sugar
1 teaspoon Vanilla
1/4 cup Hershey's Chocolate Syrup

Directions:

Place in a sauce pan butter, coke, semi sweet baking square and bring to a
boil remove from heat and add marshmallows and stir until all is blended and
the marshmallows are disappear. Set aside to cool enough to tepid or room
temperature.

In mixing bowl blend the shortening, oil, vanilla and sugar until fluffy.
Add eggs and buttermilk and beat until smooth. Mix flour with baking soda,
cocoa, baking powder and salt, add half of flour mixture to shortening, egg
mixture, and beat. Scrape bowl time to time to clean the sides off so
ingredients are blended in batter. Add cooled coca cola mixture and beat.
Add remainder of flour and beat until completely smooth about 3 - 4 minutes.
Batter will be thick.

Place batter into a 13" x 9" x " 2 oiled and floured baking pan. Set pan on
top shelf in a preheated 350 degrees oven for 35 - 40 minutes. Check for
completed baking time with a toothpick. If the toothpick comes out clean by
sticking in the middle of the cake it is time to come out of the oven and
cool.

For Frosting: Cream butter, add cocoa, vanilla, Hershey's Syrup, and coca
cola, beat until smooth. Add powder sugar a little at a time and beat
constantly. Scrape the sides of bowl time to time to get all ingredients
into the frosting. If the frosting seams a little dry add a little more coca
cola and beat well.

Frost warm cake. Serve with natural vanilla bean ice cream and enjoy.
