Default Frozen mixed veggies

Thought I was buying regular, but turns out it's a gumbo mix, with
okra. Two questions: if I make a roux, should I defrost the veggies
first? If I toss 'em in frozen will the extra water mess up the roux?

Next question: Normal veggies might simmer for an hour. Should frozen
veggies simmer as long?

Next concern that;s really a question: Okra is usually tossed in later
than other veggies; this mix has the okra in it. Will over cooking the
okra be a problem?

Okay that's four questions; it seemed like two at first. If that's a
problem, please answer only 1 (and 1a) and 2.

Yes.

I'd heat the veggies and roux separately, then drain any excess water
from the veggies before adding the hot roux.

Mm, depends...
Okra will add it's normal "slime" to any mix, but personally I don't
have a problem with it. It'll just be a nice thickener for the roux. <G>

Gumbo was fine. Even with abbreviated cook time, fine-diced frozen
mixed veggies, including most of the okra, disappeared. Convenient, but
I think I'll chop fresh next time. Thanks.

Fresh frozen is no substitute for fresh... but sometimes it's a time
saver. ;-)
