Thought I was buying regular, but turns out it's a gumbo mix, with
okra. Two questions: if I make a roux, should I defrost the veggies first? If I toss 'em in frozen will the extra water mess up the roux? Next question: Normal veggies might simmer for an hour. Should frozen veggies simmer as long? Next concern that;s really a question: Okra is usually tossed in later than other veggies; this mix has the okra in it. Will over cooking the okra be a problem? Okay that's four questions; it seemed like two at first. If that's a problem, please answer only 1 (and 1a) and 2. Tks |

Even with abbreviated cook time, fine-diced frozen mixed veggies, including most of the okra, disappeared. Convenient, but I think I'll chop fresh next time. Thanks. |
