![]() Someone the other day was asking for my recipe for these cookies that we give out at halloween. We had a major glitch with our browser and were offline for 3 days. So here it is a little late. It's my friend Lenore's recipe that I tweeked with my homemade pumpking pie spice to make them a bit "halloweeny". The kidlets that come to our door look for them every year. We put a label on them with our name, address and phone number so parents know where they came from. Oatmeal Chocolate Chip Spice Cookies 1/2 cup margarine 1 slightly beaten egg 1 tsp vanilla 1/3 cup brown sugar 1/3 cup white sugar 3/4 cup all purpose flour 1 cup rolled oats 1/2 tsp baking soda 1 cup chocolate chips 1 tbsp. plus 1 tsp. pumpkin pie spice Cream margarine and sugar. Beat in egg and vanilla. Mix dry ingredients well and add a bit at a time into wet mixture until well mixed. Drop onto ungreased cookie sheet. I use a 2 1/4" ice cream scoop rounded to make a large cookie and I flatten them to help them spread enough. They end up being about 5-6 inches across. Bake at 350 for 12 minutes for this size. You can make them regular size if you wish, but I don't know if the time will vary....watch the first batch and judge from there. ...Sharon |

For Chinese New Year, use 5-Spice Powder instead of pumpkin pie spice (might want to reduce it a little; use maybe 1 tsp instead of a heaping Tbsp.) And for Thanksgiving... I think I would just use the basic recipe with pecans. This is the only time I bake cookies, though, since we are both diabetic and don't deal with that kind of temptation very well....lol....Sharon |
