Default Dinner tonight and a recipe.

It's been wet and rainy - perfect soup weather. Tonights dinner? Corn
Chowder with Smoked Salmon
We needed a taste of "home" and this fit the bill.

Corn Chowder with Smoked Salmon

4 oz sliced bacon
3 tablespoons chopped onion
1 cup diced, pared, raw potato
2 cups water
1/2 teaspoonful salt*
1/2 teaspoon dill weed (dried)
1 small bay leaf
3 tablespoons flour
2 cups milk, divided
2 cups whole kernel corn
4 ounces of smoked salmon with oil

Sauté the bacon until lightly browned. Add the onion and sauté until
lightly browned. Add the potato, water, salt, dill weed, and bay leaf.
Cook until the potatoes are tender.

Combine the 3 tablespoons of flour to 1/2 cup of the milk. Blend. Add
to the above. Bring to just boiling and simmer for about 5 minutes

Heat the remaining milk. Add along with the corn and smoked salmon.
Heat until corn and salmon are heated through.

* salt may be adjusted based on the saltiness of the smoked salmon.
