Default Overstocked on good Swiss cheese

I bought more Swiss cheese than I really need for my usual ham 'n Swiss
sandwiches to take to work. Have been thinking about making some good
macaroni and cheese. Does anyone have a recipe using Swiss in macaroni
and cheese? Any other ideas to use up a half pound of Swiss? I
definitely don't want it to go to waste, and it won't keep long since I
bought it sliced.

I'd make Reubens, m'self. I've also been known to make grilled cheese
sandwiches with Swiss on Pumpernickel.

Default Overstocked on good Swiss cheese

Make a traditional fondue!

If you still want to do mac-n-cheese with it, I make one that's pretty
easy. I just make a basic white sauce, add a little cayenne pepper &
nutmeg to it, then shredded Swiss AND white cheddar. Mix sauce with
cooked macaroni, place in lasagna-type pan, sprinkle with buttered
bread crumbs (fresh if you can) and bake until golden & bubbly. Very
good.

YES! Grilled cheese with swiss and some ham BTW, you can freeze swiss
if you don't care about texture later. It gets crumbly but works well in
casseroles which call for Swiss.

Jeez, a mere *half - pound* is "overstocked"!? __40 pounds__ might be
"overstocked", 8 oz. is not even worth querying about...

Spaetzle with sauteed onions and swiss cheese. It can be baked as a
casserole, or simply tossed together with some butter added, as you
would with pasta.

Tuna melts with swiss on rye bread.

Swiss just doesn't appeal to me for Macaroni and Cheese. It is great on
Coquilles St. Jacques. It just last a few weeks sliced. I am in the middle
of a ham and Swiss sandwich right now. The cheese was sliced two weeks
ago. It's fine.

Quiche? I've made this one several times, it's really good:

Bacon Quiche

Pastry for one 9-inch pie crust

10-12 slices bacon, cooked and crumbled
3/4 C. swiss cheese, shredded
3/4 C. cheddar cheese, shredded
1/2 C. onion, finely chopped
4 eggs
2 C. whipping cream
3/4 tsp. salt
1/4 tsp. black pepper
1/8 tsp. red (cayenne) pepper, ground

Heat oven to 425º. Lay pastry in quiche pan. Sprinkle
with bacon, cheese, and onion. Beat eggs slightly, beat in
remaining ingredients. Pour into quiche pan, bake uncovered
for 15 minutes. Reduce oven to 300º, bake about 30 minutes
longer, or until inserted knife comes out clean. Let stand
10 minutes before cutting.

Chicken Quiche: Replace bacon with one whole chicken
breast, cooked and cut into cubes. Replace red pepper
with 1/2 T. fresh or 1/2 tsp. dried thyme, crushed.

Replying to everybody who's posted recipes. Thanks! There are a lot of
great ideas here. I've never made a quiche, but that certainly sounds
great. And some of the others sound delicious too. I'm going to print
out the recipes, pick one and try it later this week.

Wrap it well and freeze it. It can be used later in cheese soup or baked
dishes.

Unless I get the 40 lb. wheel mentioned above, I doubt that cheese,
especially Swiss (my favorite), will ever be frozen in my house. It
will be eaten long before that...

I freeze cheese when I buy in bulk. Colby, provolone, Swiss, cheddar etc,
although I've never tried freezing soft cheeses like goat etc.
