Absolutely. Toast two pieces of your favorite bread (I'd avoid raisin),
butter it and slice one piece diagonally. Arrange on a plate so that the
pattern is attractive to you. I like the double arrow.
Cook two eggs any way you like them. I prefer over-easy. Scrambled,
shirred, poached and over-hard are options. Arrange the eggs to best
cover the toast and cover the result with the chili.
Finely chopped red onion and your favorite cheese can be sprinkled on
top to your palate. We eat this quite often. It's quick and easy.
Perhaps it's not lo-cal though.
