Aside from eggs benedict, what else can I do with these English Muffin
beauties? (I know they aren't "English" and I know, toast, butter and jam). Anything else? (These aren't USA's pretenders 'Thomas' muffins nor Wonderbread, they are sourdough muffins.) So, maybe some cheese toast? I have some lovely cheeses in my freezer. But aside from making them into croutons to dot soup or stew, any suggestions? Egg mcquown? (I'd have to buy sliced ham or "Canadian" bacon".) Jill |

Egg and cheese is fine. Or add some green pepper or whatever else you would add to an omelet. They're good toasted with peanut butter if you like that. Mini pizzas made with EM's we a favorite when I was a kid. I haven't had one in years but they are pretty tasty. How many do you have? They do freeze ok. Lou |

Or, sticking with tuna, make some well-spiced tuna cakes in the style of Maryland Crab Cakes and eat them on these great muffins with lettuce and a red onion ring or two with some chipotle mayonnaise. |

Toaast the english muffins. Spread thinly with cream cheese - flavored if you have it (garlic & herb or scallion or chive) Top with thinly sliced tomatoes and red onions and some sprouts Add a slice of cheese (muenster, colby, jack all work well) and run it under the toaster oven broiler to melt. Good for breakfast or lunch. |

But to each their own. The cat is interesting too. I wonder if animals tastes change as they age just like people. There are things I didn't like when I was young but love now. Blue cheese, sardines and smoked oysters come to mind. I wasn't around when our cat was young but I've been told she wouldn't eat anything other than cat food. Now she loves pizza, tuna, sardines, chicken etc. I've had tuna melts with Swiss cheese that were quite good and I was wondering if crab might work as well. I googled and found a several crab with Swiss melt recipes, but more menus with it showing up. If I had the ingredients here I might have even tried it for dinner tonight myself. This looks like it would be good on the EMs http://www.alpinelace.com/recipes/re...RecipeID=6160C These are kinda lame but I'm sure you'll get the idea. http://www.recipezaar.com/245 http://www.recipesource.com/main-dis...1/rec0152.html I suppose not your going to say you HATE Swiss cheese.
