I googled on "dehydrated red onion" and got lots of hits for places that
import and sell them. I have no experience with any of them. From
looking at the hits I got, I'd guess that an Indian import store might
be the first place to look.

I get them in a chinese market. A vietnamese product. Large jar, about 2
cups for about 2 dollars.

The one I saw alos was form Asian store. I just didn't know which
particular one whenever I was there, I didn't find it. Not that I
looked for it seriously. Which section did you find this jar?

Oops i think you are right, red onion 'frit', good stuff, but now that
you mention it the herb counter in the local Italian deli has
'dehydrated' onions as well as garlic and some expensive mushrooms.

The African American butcher across the street also has dehydrated mixed
vegetables, i used them once but was not impressed.

I dehydrated a red onion then turned it to onion powder...The taste was
good, but it turned into a solid lump...somewhat like brown sugar does
except harder...too much of a pain to re-powderize.

Slice a red onion or any onion...extremly thin. Spread out the slices on
a cookie sheet. Place in a warm oven (180F -ish) or dehydrator till
dried.

Use a blender, food processor or stick blender with attachment to
powderize.
