Default Dinner tonight

In the oven (vegetarians, close your eyes): Meat loaf made from a
pound each of beef, lamb, and pork, along with some dried onions
(forgot to buy fresh ones), some oats, three eggs, a grated carrot,
some sliced mushrooms, some seasoned salt, and a bunch of granulated
garlic.

Also boiling small white potatoes, and I'll make a mushroom sauce for
the top. Yum.

Smells good, too, but I planned the timing without realizing I was
using the timing for my usual meat loaf, which is 2 pounds. This
three-plus pound loaf is taking longer.

So duh. Oh, well, we'll eat potatoes and gravy while we wait for the
meat.

However, it was the best meatloaf I've ever made. James said it would
be the best meatloaf he'd ever had, but it's too chunky to make proper
meatloaf sandwiches with the next day, so it loses a couple of points.
:-)

I have been blown away by the wonderful flavor of the combination ground
beef and ground lamb in the cardamom spiced meatloaf recipe I found. It
seems so much "beefier" tasting.

I'll bet it's fine for sandwich slicing. Even loose meatloafs seize up
to slicing perfection in the fridge.

He thinks it's too chunky for sandwiches. We ended up warming it up
and having it with the leftover potato salad. Yummy.
