8 oz (1/2 box) penne pasta
1 tbsp Olive oil 1 tbsp butter 8 oz frozen chopped spinach, cooked and drained 1/4 cup shredded cheddar 1/4 cup parmesan/romano mix grated cheese 3 cloves garlic crushed and diced Salt and pepper to taste Cook penne al dente (11 minutes) Dump penne in collander and return pot to burner, heat on low Put olive oil in pot Sautee garlic 2 minutes Add spinach and sautee 1 minute Add penne pasta and mix thoroughly. Add parmesan and cheddar, mix and heat through Salt and pepper to taste, serve with shaker of parmesan to top it off. It's a little fatty, but full of good nutrients. And delicious! |

I make this all the time - it's one of my faves. I like it with black olives and mushrooms, too. -L. |
