The carrots turned out great, so I thought I'd post about 'em. Tossed
carrot chunks with oil, soy sauce, granulated garlic, and the juice from some pickled sushi ginger (I didn't have any fresh ginger). Roasted them at 400 for about a half hour or possibly a bit more, turning them once about 20 minutes in. Way yummy!
