Default Leftover Turkey? Here's a thought...

12 corn tortillas, heated until pliable (keep them warm wrapped in a hot
towel)
3 c. cooked turkey, minced
8 oz. shredded pepper jack cheese
8 oz. shredded oxaca cheese
1/4 c. minced onion
1 cup sour cream
salt & pepper to taste
Green Chile sauce (below)

Green Chile Sauce:

Saute 2 cloves of garlic and one small minced onion in corn oil until
translucent. Stir in 3 oz. chopped green chilis (you can buy this in a can)
and salt to taste. Add one cup water and 1 Tbs. flour and stir the mixture
vigorously. There you have your sauce. Set it aside.

The Enchiladas:

Mix 1 cup of the chile sauce with the minced turkey. Place a few spoonfuls
of the mixture down the center of the warm corn tortillas. Roll them up and
place seam-side down in a baking dish. Pour the remaining sauce over the
tortillas and then top generously with the grated cheeses. Bake at 350F for
about 20 minutes. Now top with dollops of sour cream if desired. Return the
enchiladas to the oven and bake another 10 minutes.

True, I don't like turkey. I roasted a cornish game hen. Doesn't mean the
rest of the U.S. doesn't have leftovers.

Turkey Minestrone


Ingredients
3 Ounces TURKEY BACON, diced
1/2 Cup onion, 1/4-inch diced
1/2 Cup celery, 1/4-inch diced
3 Medium Cloves garlic, crushed
1 Cup carrots, 1/4-inch diced
1 Cup dry white wine
3-3/4 Quarts TURKEY STOCK
1-2/3 Cups potatoes, peeled, 3/8-inch diced
1-2/3 Cups diced tomatoes (canned) with juice
1 Cup tomato sauce
1 Tablespoon dried basil leaves
3/4 Teaspoon salt
3/4 Teaspoon sugar
1/2 Teaspoon black pepper, ground
2-1/2 Cups small shell pasta, uncooked
2-1/2 Cups zucchini, quartered and sliced 1/4 inch
2-1/2 Cups pinto beans, canned, drained and rinsed
3 Tablespoons fresh parsley, chopped
1-1/2 Pounds PULLED TURKEY or COOKED TURKEY, 3/4-inch diced
As needed Parmesan cheese, grated

Saute bacon over medium heat in large kettle until fat is rendered and
bacon is browned. Add onions and saute until translucent. Add celery
and saute 3-4 minutes. Add crushed garlic, cook 2 minutes, add carrots
and cook 2 minutes.
Add wine, stock, potatoes, tomatoes, tomato sauce, basil, salt, sugar,
black pepper, and pasta. Cover, lower heat and simmer 15 minutes,
stirring often.
Add zucchini and cook 5 minutes.
Add beans, parsley and turkey, bring back to a boil. Immediately reduce
heat, and simmer for 5 minutes.
Serve hot with Parmesan cheese sprinked atop each serving.

This casserole is great with turkey or chicken.
INGREDIENTS:

* 3 to 4 cups cooked chicken
* salt and pepper
* 8 ounces fine noodles or spaghetti, cooked and drained
* 6 tablespoons butter
* 8 ounces sliced mushrooms
* 1/4 cup all-purpose flour
* 1 cup light cream or half-and-half
* 2 cups chicken broth
* 1/4 cup dry sherry
* 1/3 cup grated Parmesan cheese
* paprika, optional

PREPARATION:
Preheat oven to 425°.

Cook spaghetti or noodles according to package directions. Meanwhile,
in skillet, melt 2 tablespoons butter over medium-low heat; sauté
sliced mushrooms until golden. In a saucepan, melt 1/4 cup butter;
stir in flour, and 1/2 teaspoon salt. Stir until smooth; add chicken
broth and cream. Cook, stirring, until sauce is thickened. Add
chicken, cooked mushrooms, and sherry; heat through. Place noodles or
spaghetti in a buttered baking dish; pour on sauce. Top with Parmesan
cheese and sprinkle with paprika. Bake at 425° for 15 to 20 minutes,
until hot and bubbly.

Chicken tetrazzini serves 8.

Thanks.

I really like turkey meat. My favorite is plain old hot turkey
sandwiches. Toast bread, top with warm turkey and hot gravy.

YUM!
Or club sandwiches. Or some turkey in a nice tossed salad.

Turkey bacon? Tell me you're kidding, please! Tried it once, and once was
enough. It's molded, pressed turkey shaped like strips of bacon. I'll
admit turkey sausage (the Mr. Turkey brand) isn't half bad; it's hard to
mess up adding sage and pepper to ground anything to make it taste like
breakfast sausage. But I don't do turkey bacon. I don't do that frozen
beef strip stuff for sandwiches, either... what's it called... Steakwiches
(or something like that).

Daughter told me she has switched over to turkey bacon. You have to
find the right brand and cook it properly though. She usually does
bacon in the oven, but says you can't do that to turkey bacon. I'll
wait until she cooks me some to decide if I like it or not.

It's not all **that** bad, IMO. I buy it for my BIL who doesn't eat
pork for religious reasons. I tried it and even though it looks
funky, it tastes ok. I wouldn't buy it only for myself, but sf is
right when she says you have to get the right brand.
